For the Salad:

  • 1 large head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • ½ cup corn kernels (fresh or canned)
  • ½ cup black beans, drained and rinsed
  • 1 medium avocado, diced
  • ½ cup tortilla strips or crushed tortilla chips
  • ¼ cup cotija cheese, crumbled
  • 2 tbsp fresh cilantro, chopped

For the Dressing:

  • ¼ cup mayonnaise
  • ¼ cup Greek yogurt
  • 2 tbsp lime juice
  • 1 chipotle pepper in adobo sauce
  • 1 clove garlic, minced
  • 2 tbsp Parmesan cheese, grated
  • 3 tbsp olive oil
  • ½ tsp ground cumin
  • ¼ tsp salt
  • ¼ tsp black pepper

Instructions

  1. Prepare the Dressing
    In a blender or food processor, combine mayonnaise, Greek yogurt, lime juice, chipotle pepper, garlic, Parmesan, olive oil, cumin, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning if needed.

  2. Assemble the Salad
    In a large bowl, toss together the romaine lettuce, cherry tomatoes, corn, black beans, avocado, and tortilla strips.

  3. Add the Dressing
    Drizzle the chipotle Caesar dressing over the salad and gently toss to coat everything evenly.

  4. Finish with Toppings
